True comfort food, delicious on a rainy day. This is one of those tasty weekend recipes that you keep on eating. It's also super healthy! You can use the sweet potato in different variations; mashed, as french fries and even as noodles. What is your favorite sweet potato dish?
Red pepper (sweet)
Cumin Ground (grinded)
Preheat the oven to 375℉.
Scrub the sweet potatoes clean and dry them with a kitchen towel.
Place each sweet potato on a fairly large piece of aluminum foil. Sprinkle each potato with 2 teaspooons of olive oil and rub this in. Prick with a fork on all sides.
Wrap the sweet potatoes in the aliminum foil and place in the preheated oven. Bake the potatoes for 30-50 minutes until cooked (depending on their size).
Finely snipper the onion and garlic. Dice the chicken breast and pepper into small pieces.
Heat some coconut oil in a pan and fry the chicken until it is cooked through.
Add the onion and garlic and fry until the onion is glazed.
Add the tomato paste and cook for a few minutes.
Add the pepper, paprika powder and cumin to the chicken and fry until the pepper is soft. Season to taste with the salt and pepper.
Take the sweet potatoes out of the oven, remove the aluminum foil and put them on a plate.
Cut the sweet potatoes lengthways and open them up slightly. Season to taste with salt and pepper.
Fill the sweet potatoes with the chicken mixture.
