Place a rack at the bottom of the slow cooker so that the chicken is not in direct contact with it.
Mix the olive oil, coconut aminos, honey, the spices and vinegar together in a bowl.
Coat the chicken with this mixture and rub it in.
Put the chicken on the rack in the slow cooker.
Cook on the low setting for 6 hours.
If you prefer a crispy skin, place the chicken under a grill for about 15 minutes.
