Smoked chicken breast
Peel the sweet potato and cut into cubes. Then cook the sweet potato until cooked.
Cut the cauliflower into florets and cook until al dente.
Drain the sweet potato and put it back in a large pan.
Add the coconut oil and a good pinch of salt and pepper and mash into a smooth puree.
Add the spinach to the sweet mashed potatoes and stir well.
Cut the chicken fillets into slices.
Divide the puree over the plates, and distribute the cauliflower florets on top.
Put the slices of chicken fillet on top and sprinkle with the spring onion.
