Cut the broccoli into small florets and the stalk into pieces.
Heat a pan with water and cook the broccoli until tender. Drain and put 1/3 of the broccoli in the blender.
Add the coconut milk, a good pinch of salt and pepper and mix into a smooth sauce.
Peel the sweet potatoes and turn them into noodles with a spiralizer.
Peel the parsnip and cut in half lengthwise. Use a mandolin to slice wafer-thin slices of it.
Heat coconut oil in a wok and fry the parsnip slices for a few minutes.
Add the sweet potato noodles and fry until cooked. Add the broccoli florets and stir them through.
Just before serving, pour the warm broccoli sauce over the dish.
