Sweet potato salad

A delicious vegetarian starter, side or lunch dish. You can't help but be pleased with such a versatile recipe. Steamed sweet potatoes tend not to fall apart so easily and therefore much more suitable for salads. Prefer meat with your salad? Add, for example, some smoked chicken.

Peel the potatoes and cut into wedges. Half the cherry tomatoes and roast the pumpkin seeds in a dry pan on a medium-high heat.

Mix the oil, pepper, salt and chili flakes in a bowl.

Add the potatoes and toss until all the potatoes are covered with a layer of oil.

Steam the potatoes (for approximately 20 minutes) until cooked. Leave to cool.

Make the dressing by beating the vinegar, olive oil and mustard together and season to taste with salt and pepper.

Mix the cherry tomatoes, arugula, pumpkin seeds and dressing through the potatoes.

Divide over 4 plates.
