It's that time of year again. It's beginning to get colder so a bowl of soup is always welcome. Spoil yourself with this sweet potato soup with an Oriental touch. The ginger, lemon grass and harissa give a completely different and delicious twist to this soup.
Snipper the onion, press the garlic and grate the ginger.
Melt the coconut oil in a soup pan on a medium-high heat and glaze the onion and garlic.
Add the sweet potato pieces and ginger and fry for about 10 minutes.
Add the lemon grass followed by the vegetable broth and let the soup simmer for about 15 minutes until the potato is soft.
Add the coconut milk and harissa to the pan and puree the soup with a hand blender or in the blender.
Taste the soup and, if necessary, season to taste with salt, pepper or harissa.
