Cut the pineapple into small pieces. Peel the ginger and grate/chop finely.
Mix the pineapple, ginger, tomato paste, oil, lime juice, vinegar and coconut blossom sugar in a bowl.
Cut the chicken into cubes and pour the marinade over it.
Let it stand for at least 1 hour so the flavors can be absorbed.
Cut the vegetables into small cubes and the onion into rings.
Heat a wok over medium heat.
Stir-fry the chicken until brown, then add the vegetables (except the spring onion) and fry until everything is cooked.
Sprinkle the spring onion over the dish just before serving.
