Peel the taro with a peeler or a sharp knife.
Cut the taro into french fries and give them a good rinse. Let them dry on a piece of paper towel.
If you would like your fries done in the oven, then preheat the oven to 375°F. Lay the fries on a baking tray lined with baking parchment and season with salt and pepper and finally a bit of coconut oil. Put into the oven for 12 minutes.
After 12 minutes turn the fries over and bake in the oven for another 10 minutes.
If you prefer your fries fried, then put some coconut oil into a small saucepan and put on the heat and fry the fries twice. The oil temperature should be approximately 325°F.
You can test this by putting a drop of water into the oil. If it sputters, the oil is hot enough.
Put the egg yolk, mustard, lemon juice and salt in a bowl and mix well.
Add the olive oil, drop by drop, while beating the mixture.
The more oil you add the thicker the mayonnaise will be.
Snipper the garlic and add this to the mayonnaise. Keep in an airtight container in the fridge.
Divide the taro french fries over two 2 plates and add some homemade aioli.
