Preheat the oven to 250°F.
Prepare a baking sheet lined with parchment paper.
Coarsely chop the nuts.
Clean the kaki and cut into pieces.
Finely chop half of the nuts/kaki and mix everything together.
Also add the coconut flakes
Melt the coconut oil.
Mix the coconut oil, honey, egg whites, vanilla and spices with a pinch of salt.
Pour over the nut mixture and stir well.
Spread on the baking sheet and bake for 40 minutes in the middle of the preheated oven.
Increase the temperature to 355°F and bake for another 10 minutes.
Remove the baking sheet from the oven and let it cool completely before you take the granola from the baking sheet.
Serve the granola with the coconut yogurt.
