Cheddar cheese grated
Cut the zucchini into 1/4 inch thick slices. Heat a grill pan and grill the slices for a few minutes. Brush them with olive oil and sprinkle some salt and pepper over while grilling.
Preheat the oven to 350ºF.
Finely chop the garlic. Heat some olive oil in a frying pan and glaze the garlic.
After 2 minutes add the strained tomatoes, basil, thyme and a pinch of pepper and salt and leave the sauce to simmer for a few minutes.
Heat a pan on a medium-high heat and cook the spinach until it starts to wilt. Drain well.
Drain the tuna and slice the mozzarella.
Take an oven dish (or two individual dishes) and build up the layers as follows:
tomato sauce (on the bottom)
mozzarella and grated cheese (top layer)
Bake the lasagne in the preheated oven for 35-40 minutes.
