This fish and vegetable dish, baked in the oven, is delicious and quick. What more could you ask for? These type of dishes are perfect for a busy weekday evening. You only have to cut the vegetables, pop into the oven and time's your own. Sounds good, doesn't it?

Preheat the oven to 400°F. Line a baking tray with baking parchment.
Clean the peppers and cut into long strips.
Clean the zucchinis and slice into 1 cm slices.
Take the skin off the onion, slice through the middle and into half moons.
Divide the peppers, zucchinis and onion over the baking tray. Drizzle with olive oil and a pinch of salt and pepper and bake in the center of the oven for 15 minutes.
Take the tray out off the oven.
Lay the cod on top of the vegetables and place the tomatoes around it.
Squeeze the juice of half a lemon over the fish, sprinkle with the thyme and another pinch of salt and pepper.
Bake in the oven for another 8 minutes or so until the fish is cooked.
