A delicious fresh salad with a summery touch, through the (vegan) minced meat and the leek, it is good filling. Nice weather tip: ideal to take the salad to the park for a nice picnic.
Vegetarian minced meat
Ras el Hanout
Olive oil (mild)
Celtic sea salt
Using a cheese slicer, scrape ribbons from the cucumber and carrot. Then cut the leeks into thin rings and cut them in half. Wash the leeks in a colander with cold water.
Turn on the kettle with approx. 500 ml of water. Put the couscous in a pan and pour the boiled water over it until it is just under water. Stir with a fork and put the lid on the pan. Let it soak for about 10 minutes.
Put a dash of olive oil in a frying pan and fry the (vegetarian) mince in it. After about 2 minutes add leeks. Stir well. Now add the spice mix together with a small splash of water and mix well with the leek and minced meat. Bake for about 5 minutes and season with salt and pepper.
Mash the feta with a fork and put it in a large salad bowl together with the cucumber, carrot and olives. Then also add the couscous and the minced meat with the leek. Mix well.
Grate the zest of the orange and mix it with the salad. Season with a dash of olive oil.
Spoon the salad onto the plates and garnish with the almonds.
