The quantity is actually perfect for 2 adults and a child. But the left overs can also be eaten for lunch the next day. Or with a little creativity, as a new evening meal. I, Lucy, ate the leftover the next day with chickpeas and spinach as some sort of lukewarm sauerkraut salad, highly recommended!
