Chop the onion, chop the garlic and dice the zucchinis.
Heat coconut oil in a frying pan and fry the onion until it looks translucent.
Add the garlic and fry for 2 minutes. Add the zucchini to the pan and fry for 5 minutes.
Add the water and the stock cubes and bring to the boil.
Turn the heat down and let the soup simmer for 10 minutes.
Remove the pan from the heat and use an immersion blender to puree the soup.
Put the pan back on a low heat and stir the coconut milk through.
Season with salt and pepper.
